I know sometimes my posts or other inspiration accounts about “love can change the world” or “surrender and all is coming” can seem a little far fetched when going through a storm but I promise it’s true – at least it is for me. I have been through very dark times that I wouldn’t wish on anyone and what I have learned is: 1. Fear is the enemy 2. I don’t know anything 3. Surrender is key to change If I can let go of my ego (daily action) and my will (I don’t know always what is “best” for me), I can then fully surrender in faith (fear will never let you trust God) … That is when change happens for me. I’ve worked so hard and tried to “make it happen” but I always ended up short. When I finally let go is when my miracle happened. It will happen for you too. Let go. Surrender. Vegan Food Lovers Features Vegan Eggplant Meatballs ❤️ By @skinnytaste 4 servings “Meatballs” Ingredients: cooking spray 1 tbsp olive oil 1 lb unpeeled eggplant, cut into 1-inch pieces 1 tsp kosher salt 1/2 tsp black pepper 1 medium onion, chopped 1 tbsp minced garlic 1 cup cooked white beans (or drained, rinsed canned) 1/4 cup chopped fresh parsley 1 cup whole wheat breadcrumbs or panko (use gf crumbs for gluten free) pinch red chili flakes (optional) 2 cups quick marinara sauce Directions: Heat the oven to 375°. Spray a large rimmed baking sheet with cooking spray. Place 1/2 tablespoon olive oil in a large nonstick skillet over medium high heat. When hot add the eggplant and 1/4 cup water. Season with salt and pepper and cook, stirring occasionally until tender, 10 to 15 minutes. Transfer to the bowl of a food processor. Quick Marinara Sauce Ingredients: 1 tsp olive oil 2 cloves garlic, smashed 28 oz can crushed tomatoes (I like Tuttorosso) 1 small bay leaf 1 tsp oregano 2 tbsp chopped fresh basil salt and fresh pepper to taste Directions: In a medium pot, heat olive oil over medium heat.Add garlic and saute until golden, being careful not to burn. Add crushed tomatoes, salt, pepper, oregano, and bay leaf. Stir and reduce heat to low. Cover and let simmer about 15 – 20 minutes.
